Don't watch them, they are cut off from the normal Fate/-franchise and rules and concepts only explained in the mobile game apply, those were animated only in order to please the players of the game. And so they can hoard a little more money.
But if you want to start the Fate/-franchise, that is a different thing.

The thing with Fate Stay Night, Fate/Stay Night Unlimited Blade Works and Fate/Stay Night Heavens Feel is, that it was originally. Visual Novel with multiple choices which would then alter the end you'd get depending on what you chose.
Thus you actually have more than 3 endings, these 3 are just the most commonly known ones and were thus animated.
They all begin the same way up into the first third, from where on they start to divert into their respective routes.
1st being the Artoria
2nd being the Rin
And 3rd being the Sakura route.
The reason why you shouldnt watch en in a consecutive order is because they start and end differently, they also add on top of each other, including Fate/Zero and some of the other series'.
